I didn't send a recipe for Deborah because her absolute favorite was my home made lasagne and I had it ready cooked for her the day she passed.   I haven't been able to make it or eat it since.  I wish I could bring myself to write it out for you but I just can't.
 
I didn't follow a recipe for it, it was just my own creation with everything thrown in.

CHICKEN  ENCHILADA  CASSEROLE

 

2 I/2 CUPS COOKED CHICKEN

 

11/2CUPS CHICKEN BROTH

 

1 CAN CREAM OF CHICKEN SOUP

 

1 CAN CREAM OF MUSHROOM SOUP

 

1 (4 OZ) CAN CHOPPED GREEN CHILIES,DRAINED

 

1 (4 OZ) JAR CHOPPED PIMENTOS ,DRAINED

 

6 CUPS SLIGHTLY CRUSHED TORTILLA CHIPS

 

1 LB CHEDDAR CHEESE, GRATED

 

 

 

MIX TOGETHER ALL INGREDIENTS EXCEPT CHIPS

 

AND CHEESE. COVERTHE BOTTOM OF A 9X13

 

BAKING DISH WITH 1 CUP OF CHIPS .

 

LAY IN ORDER: 1/2 CHICKEN MIXTURE,1/3 CHEESE

 

REPEAT ENDING WITH CHIPS TOPPED WITH

 

CHEESE.

 

REFRIGERATE AT LEAST 1 HOUR OR OVERNIGHT.

 

BAKE AT 350 DEGREES FOR 45 MINUTES .

A recipe for Pumpkin Pie.  Dustin loved food and loved to eat, just like his momma, LOL. 
Pumpkin Pie was one of his favorites though.
 
Pumpkin Pie
 
3/4 cup sugar                        1 can (15 oz.) pumpkin
1/2 tsp salt                            1 Can (12 fl. oz) Evaporated Milk
1 tsp ground cinnamon          1 unbaked 9 inch deep-dish pie shell
1/2 tsp ground ginger
1/4 tsp ground cloves
2 large eggs
 
Mix sugar, salt, cinnamon, ginger and cloves in small bowl.  
Beat eggs in large bowl.   Stir in pumpkin and sugar-spice mixture. 
Gradually stir in evaporated milk.
 
Pour into pie shell
 
Bake in preheated 425 over for 15 minutes.  Reduce temperature to 350,
bake 40-50 minutes or until knife  inserted near center comes out clean.
Cool on wire rack for 2 hours. 
Serve immediately or refrigerate.

Chicken Dorrito Casserole

 

Ingredients:1 bag Nacho Cheese Dorritos

1 can cream of chicken soup

1 can cream of mushroom soup

1 whole chicken, cooked, skinned, deboned and chopped

1 can Rotel (Mild) tomatoes, drained

Salt and pepper to taste

1 bag shredded cheddar cheese

1 bag shredded sharp cheddar cheese

Nonstick cooking spray

 

In a large mixing bowl, add chicken, soups, Rotel tomatoes, and a sprinkle of salt and pepper; stir to mix ingredients. Mix in cheddar cheese and HALF of the sharp cheese; crumble HALF of the Doritos and mix crumbs into mixture. Pour mixture into baking dish that has been sprayed with nonstick cooking spray. Put in a preheated oven at 375 degrees for 20-30 minutes or until hot. Sprinkle remainder of sharp cheese on top (Jalopeno’s also if you like hot) and take remaining Dorritos and place on top of cheese. Place back in oven about 5 minutes. Make sure to watch as oven tempatures vary and you don't want to scorch your chips; bake until cheese slightly melts.

 

 

Number of Servings: 6-8 servings

Praline Topped Sweet Potatoes

Roasted sweet potatoes in butter, pecan, brown sugar, and vanilla sauce. Dish is baked 10 minutes to combine flavors and caramelize and bring out natural sugars.

Ingredients –

8 Sweet Potatoes

2 cups chopped Pecans

1 cup of Brown Sugar

1/4 cup Margarine

Pinch of Salt

1 teaspoon Vanilla

Preparation:

1. Preheat oven to 350 F.  2. Place sweet potatoes on baking sheet.

3. Bake potatoes 1 hour. 4. Remove from oven, cool slightly, peel and discard peels.

5. Slice sweet potatoes into 1/8-inch thick slices.6. Place potato slices in large, buttered baking dish.

7. Add pecans, brown sugar, margarine, salt, and vanilla to saucepan.

8. Bring to a boil and cook 2-3 minutes. 9. Pour pecan mixture over sweet potato slices.

10. Bake 10 minutes.

Cooking Tip

Praline Sauce

Substitute walnuts for pecans in a pinch. Lower the amount of brown sugar called for in this recipe to reduce calories.

It is recommended to use sweet potatoes immediately after purchase or store in a cool dark place such as a cellar or pantry.

BANANA SPLIT CAKE 

 

1      cups Honey Maid Graham Cracker Crumbs

1      cups sugar, divided

        cup (1 stick) butter, melted

2         pkg (8 oz each) Philadelphia Cream Cheese, softened

1         can (20 oz) crushed pineapple, drained

6         medium bananas, divided

2         cups cold milk

2         pkg (4-serving size each) Jell-O Vanilla Flavor Instant Pudding                  & Pie Filling

2         cups thawed Cool Whip Whipped Topping, divided

1        cup Planters Chopped Pecans

 

Mix crumbs, cup sugar and butter; press onto bottom of glass or tin 13x9 inch pan.  Freeze 10 min.

 

Beat cream cheese and remaining 1 cup sugar in bowl with electric mixer until well blended.  Carefully spread cream cheese mixture over crust; top with pineapple. Slice 4 of the bananas (or however many it takes to cover completely); arrange over pineapple.

 

Pour milk into large bowl.  Add dry pudding mixes.  Beat with wire whisk 2 min. or

until well blended.  Stir in 1 cup whipped topping; spread over banana layer in pan.

 Top with remaining whipped topping; sprinkle with pecans.  Refrigerate 5 hours.

 Just before serving, slice remaining 2 bananas; arrange over dessert.

 

Makes 24 servings.

 

Variation:  For a lighter version, prepare as directed, using Philadelphia Neufchatel Cheese, 1/3 Less Fat than Cream Cheese, Jell-O Vanilla Flavor Fat free Sugar Free Instance Reduced Calorie Pudding & Pie Filling and Cool Whip Lite Whipped Topping.

POT ROAST AND YORKSHIRE PUDDING

Yield 4 servings 
Ingredients
2 pounds rump roast
garlic powder to taste
salt to taste
freshly ground pepper, to taste  
1/4 teaspoon salt
1 cup all-purpose flour
2 eggs, beaten
1 cup milk

Directions
Preheat oven to 375 degrees F (190 degrees C).
Wash roast and sprinkle with garlic powder, salt and pepper. Insert a meat thermometer into the thickest part of the roast, making sure it doesn't touch any bone or fat.
Bake on a wire rack inside of a large roasting pan in the preheated oven for 90 minutes, or to desired doneness. For medium-rare, the meat thermometer should read 135 degrees F (57 degrees C). Remove roast from pan, reserving drippings.
In a small mixing bowl, beat the two eggs until frothy. In another small bowl, mix the salt and flour. Stir the beaten eggs into the flour. Stirring constantly, gradually pour in the milk.
Preheat oven to 400 degrees F (200 degrees C).
Pour the reserved pan drippings into a medium muffin tin. Place in the preheated oven for 3 minutes. Remove from heat and pour the egg, flour and milk mixture into the hot drippings. Return muffin tin to the oven and bake for 20 minutes, or until fluffy and golden brown.

Meatballs Italian Style
 
2 pounds of good chopped beef (I use 90% beef)
garlic (to taste)
onion (to taste)
Parsley
2/3 eggs
Italian Locatelli Romano (to taste) Cheese grated
Italian Bread Crumbs
 
Mix all together well.  Shape into balls.  I find a tablespoon to be a good size for the mixture (not too big they won't fry well).  Heat an iron skillet with some Olive Oil in it just to coat bottom and to allow meatball not to stick.  Fry until fairly well done.  If you use it in an Italian gravy it is okay to keep them a little on the undone side.  However, Geoff and my husband love them and eat them right out of the skillet so I fry them well.  Flip them from side to side with a spoon being careful not to break them up so they cook well on all surfaces.
Drain them on paper towel or use the ubiquitous paper bag of my grandmother's era.  Eat with a good Italian or French loaf (fresh).

Pavlova

          Ready in: 1 hour 15 mins (15 mins Prep - 1 hour Cook)

A crunchy meringue base ready to be topped with whipped cream and your favorite fresh fruit - named after the famous ballerina!

Ingredients

For the meringue:

4 egg whites

250g caster sugar

1 teaspoon white wine vinegar

1 teaspoon vanilla essence

 tablespoon cornflour

For serving:

300ml whipping cream

fresh fruit-strawberries, kiwifruit or  passion fruit

Preparation method

Preheat oven to 180 C.

Beat egg whites and sugar in a large bowl with electric beaters until stiff peaks form.

In separate bowl, mix together vinegar, vanilla and cornflour until smooth. Pour cornflour mixture into egg white mixture and beat until thick and glossy, approximately 4 minutes.

Line a baking tray with baking paper and draw a 20 cm circle in the centre. Spoon or pipe mixture inside the circle, to within a little less than 2.5 cm from the edge.

Place in preheated oven, reduce temperature to 110 C and bake 1 hour. Turn oven off and leave Pavlova to cool inside.

To serve, decorate cooled Pavlova with whipped cream and fresh fruit, such as a mixture of fresh berries.

CHOCOLATE-CHERRY CAKE
 
Cake:
1 box devil's food cake mix
2 eggs
1 (14-ounce) can cherry pie filling
1 teaspoon almond flavoring
 
Icing
Generous 2 1/2 tablespoons (1/3 stick) of butter
1/3 cup milk or heavy cream
1 cup sugar
1 teaspoon vanilla extract
1 (6-ounce) package semisweet chocolate chips
 
To make the cake, preheat the oven to 350 degrees. Grease a 9 by 11 inch cake pan.
Mix all the cake ingredients in a larger bowl - the batter will be stiff. Spread in prepared pan. Bake about 30 minutes or until the cake feels firm. Cool
To make the icing, bring the butter, milk or cream and sugar to a boil in a small pot. Watch carefully to prevent it from boiling over. Lower the heat, but keep the mixture bubbling at a fast simmer. Count to 100 stirring constantly. Take the mixture of the heat, and stir in the vanilla and chocolate chips. Stir until smooth, the immediately ice the cake.

TO REMAINDER ADD:

1 STICK BUTTER CUT LIKE PIE DOUGH        

2 EGGS

MIX TOGETHER

1 LARGE CAN PUMPKIN               1 CUP SUGAR

2/3 CUP MILK                      1/2 TEASPOON CINNAMON

2 EGGS

BEAT TOGETHER AND POUR OVER BOTTOM LAYER

 

CUT LIKE PIE DOUGH:

REMAINING CAKE MIX, 1/4 CUP BUTTER, DASH OF CINNAMON

SPRINKLE ON TOP...BAKE 350 FOR 45 TO 50 MINUTES

Mozarella Stuffed Meatballs
 
Ingredients
1 egg, lightly beaten
1/4 cup prepared Italian salad dressing
1-1/2 cups cubed bread
2 tablespoons minced fresh parsley
2 garlic cloves, minced
1/2 teaspoon dried oregano
1/2 teaspoon pepper
1/4 teaspoon salt
1 pound ground beef
3 ounces fresh mozzarella cheese
2 tablespoons canola oil
1 jar (26 ounces) marinara sauce
 
Directions
In a large bowl, combine the first eight ingredients. Crumble  beef over mixture; mix well.
Cut mozzarella into eighteen 1/2-in. cubes. Divide meat mixture into 18 portions; shape each around a cheese cube.
In a large skillet, cook meatballs in oil in batches until no pink remains; drain.
In a large saucepan, heat marinara sauce; add meatballs and heat through.
Serve over pasta or as Jason loved them for meatball subs.  These were his very favorite

 Crustless Potato Quiche

5 eggs (beaten)
1 12oz. pkg. shredded frozen hash browns (thawed)
1 cup (4oz.) shredded swiss cheese
1 large green onion, chopped
c cream-styled cottage cheese
tsp. salt
1/8 tsp pepper
Dash of hot sauce
Paprika
6 slices of bacon, cooked & crumbled

Combine first 8 ingredients; stir well.  Pour mixture into a lightly greased 9" pieplate; sprinkle with paprika.

Bake at 350 degrees for 25 minutes or until set.  Sprinkle bacon evenly on top; bake an additional 5 minutes.  

Let stand 5 minutes before serving.

THIS WAS JIMMY'S FAVORITE CAKE THAT I USUALLY BAKED FOR HIM ON BIRTHDAYS
 
ITALIAN CREAM CAKE
 
1 stick margarine                               1/4 tsp. sale
1/2 cup crisco                                    2 cups flour
2 c. sugar                                          1 tsp. soda
5 egg yolks                                        1 cup chopped pecans
1 c buttermilk                                      1 c. coconut
                                                          1 tsp. vanilla
 
Combine ingredients and beat well.  Beat 5 egg whites until very stiff and fold into batter.  Bake 350 degree oven for
approximately 30 minutes {Makes 3 big layers}.  Frosting recipe below.
 
Frosting
 
1 stick margarine                                 1 c. coconut
1 box powered sugar                             1 8oz. pkg. cream cheese 
1c. pecans                                           1 tsp. vanilla
 
Mix together and spread

Jalapeno Cornbread
 
2 cups cornmeal
1 cup flour
1 1/2 tablespoons baking powder
1 1/2 teaspoons salt
2 eggs
1 cup canned corn, drained
1/2 cup grated cheese (cheddar)
1/2 cup grated onion
jalapeno pepper I also used some of the juice from the peppers.
(Joseph loved MANY MANY peppers in it.
Milk or buttermilk
 
Mix dry ingredients together in large bowl
In bowl, mix together eggs, milk,
add to dry ingredients
Add remaining ingredients and combine thoroughly
Pour into greased 9”by 13” pan
Bake in preheated 400 degree oven for 30 minutes or till top springs back when lightly pressed; remove from oven. cool
